There’s something incredibly satisfying about creating pasta sauce from scratch, especially when infused with the vibrant flavors of ripe tomatoes and aromatic basil. I always use fresh garlic when making this dish because the depth of taste from roasted garlic adds so much flavor to this sauce. Likewise, I love using shallots because of their mild taste. Once roasted, they don’t overpower the other flavors and add enough flavor to the sauce.

The Recipe

I love using fresh ingredients, especially if I can pick them up from the garden. There is something about getting food from a garden where you can still taste the sunkissed flavor even after cooking. However, I can only sometimes use freshly picked food when making this dish year-round. For this reason, I enjoy grape or cherry tomatoes when making this dish.

These sweet and juicy tomatoes tend to keep their flavor; the bonus is when I can buy them still on the stim from the store. Plus, when using these little flavor bombs, I save time by not having to peel the skin. The skin on these tomatoes blends into the sauce after roasting, so I save time. Sweet tomato basil is also the perfect way to use those end-of-the-season tomatoes.

Garlic is another fresh ingredient I use and keep stocked in the house. Roasting the garlic helps to give the sauce a rich, warm flavor and tones down the robust taste of garlic. The roasted garlic’s flavor profile also compliments the tomatoes’ sweet taste wonderfully. Although you can use garlic powder in a bind, the taste will be less complete and hearty. Don’t get me wrong; I add some garlic powder when blending the ingredients. However, I do not use it to replace the much-needed fresh roasted garlic.

Tomato Basil Sauce

Shallots are an optional ingredient but add a nice punch of flavor. Since they are milder than other onions, they don’t overpower the light flavors of the sweet tomatoes and basil. However, they do add more depth to the sauce. If you don’t have any shallots ready for roasting, add some onion powder when blending the other ingredients.

Lastly, choose the right olive oil for the job. We all have some oil in our pantry, however, not all oils are suitable for cooking and roasting. You want to ensure you are using an olive oil that can handle higher heat so there isn’t a burnt aftertaste. Read the bottle’s label to see if the oil is used for marinades, salad dressing, sauteeing, dipping bread, or frying food. I typically use Bertolli olive oil since it has a high cooking temperature and is best for baking and cooking.
