Shrimp is one of my favorite things to eat during summer. I’m reminded of the beach, sea breeze, and the warm summer sun. It’s light, easy to cook, and is so versatile. We always have some leftovers, so I create new dishes, which can be a delicious meals or an easy grab-and-go dish. Shrimp salad is one of the easiest things to make from peel-and-eat shrimp or boiled shrimp.

I enjoy the bite-size pieces over a bed of lettuce or in a wrap. Chopping the larger shrimp into smaller pieces makes them easier to eat, but this is more of a personal preference. I also like using sweeter shrimp for this type of salad because it helps with the overall flavor and is an excellent balance to the tang of Greek yogurt or sour cream (whichever you prefer).

Summertime vegetables are the best tasting. They are fresh, flavorful, and such a large variety. The mix and matching possibilities are endless; you can eat them right out of the garden, and they make a fantastic pairing with any protein. For this shrimp salad, I wanted to try a different flavor profile besides the common dill and cucumber combination you typically eat in a shrimp salad. The mix of avocado, tomato, corn, and onion has a playful flavor profile of a Tex-Mex dish which is an excellent base for adding more of your favorite flavors, such as cumin, jalapenos for heat, or chili powder.

Creating flavor is the fun part of any meal and cooking. You get to become a scientist in the kitchen, drawing on vacations, memories, favorite holidays, and more to create a delightful dish. Creamy avocado shrimp salad is no different and made from the ingredients I had at home. It became a melting pot of flavors and a new life to some produce sitting on my counter.

I cut the avocado into smaller pieces since the shrimp was the dish’s star. Likewise, I cut the shrimp into bit size pieces so it was easier to eat and put into the wrap. Since I like garlic and cilantro, I added more than the recipe calls for. If these are not your favorite, you can adjust the amount as I did with the onion ( I put about a tablespoon and a half of diced onion). Get creative with the flavors.

When it comes to buying seafood, I buy as fresh as I can, which sometimes means visiting a seafood market in Florida where the fishermen bring the fresh catch at the docks. I know it hasn’t been sitting out and went straight from the ocean, to the boat, to an ice bath. Knowing the source of food is also fantastic.

Building a report at your local market or grocery store with the people working being the seafood counter helps with knowing when shipments are arriving, how long it takes for food to come, and more. If you are in a landlocked state, I always recommend buying frozen seafood. I also encourage others to buy locally at farmer’s markets. The produce is fresh, you’re supporting local businesses, and you can be even more creative with dishes because of the seasonal foods.
